Cucumber Watercress Chèvre Appetizers

Ingredients:  

 

Cucumber Watercress Chevre

3 cucumbers

caviar

salmon roe

 

Instructions:

 

Slice cucumber into half-inch discs, then using an apple corer, remove seedy center sections.  Scoop chèvre into a ziplock bag, twist it tight, and cut the corner so you can use it like a pastry bag.  Place cucumbers on a serving tray.  Fill the centers with chèvre, then top with caviar and salmon roe.  Serve chilled.

Cucumber Watercress Chèvre Tea Sandwiches

Ingredients:

 

Cucumber Watercress Chèvre (7 oz)

rye bread

pumpernickel bread

smoked salmon

capers

spiralized beets

 

Instructions:

 

Spread chèvre onto bread, top with smoked salmon, capers, and beets, then trim crusts, cut into triangles and serve.

Cucumber Watercress Quinoa & Lentil Salad

Ingredients: 

 

Cucumber Watercress Chèvre (7 oz)

1 package quinoa

1 lemon

3 tbsp olive oil

1 15 oz can red lentils, rinsed and drained

1 large carrot, cut into matchsticks

2 ribs celery, chopped

1/4 cup chopped red onion

1/4 cup chopped olives

fresh dill

salt & pepper

 

Instructions:

 

Cook quinoa per instructions.  Stir in lentils, carrots, celery, red onions and olives. Whisk together lemon juice and olive oil and add to the bowl.  Add salt and pepper to taste, then serve, topping with chèvre and garnishing with fresh dill.
